Blue Moon Cafe owner Sarah Simington puts her culinary mettle to the test on an episode of NBC’s Food Fighters airing tonight at 8 p.m.

On tonight’s installment of the popular cooking competition show, the versatile Fells Point chef, known for her cafe staples such as Cap’n Crunch French Toast, buckwheat pancakes, and eggs Benedict with Maryland crab, will go head-to-head with a home chef.

As is customary on Food Fighters, the home chef has the home-team advantage, selecting specialties they’ve had years to perfect, while the professional chef is testing the dishes for the first time.

During each of the five rounds, the competition increases in difficulty. In the final round, Simington, who is getting ready to open a second location in Federal Hill, will be pitted against a celebrity chef. (Though there’s no word on which one, Charm City Cakes and Ace of Cakes star Duff Goldman has appeared on previous episodes.)

“I consider myself [as someone who shows] grace under pressure,” Simington recently told WBAL-TV. “I mean, obviously with what I do with Blue Moon Café . . . we’re busy nonstop. So, I’m used to the high-paced and the fast and thinking on our feet. I thought it was fantastic, getting out there and not knowing what you’re going to do and just having it thrown at you and having to create something. That’s my forte.”
