A class in professional classic French butchery will be led by Master Butcher Marc Pauvert, in which he will explain the art of butchery as he expertly butchers beef tenderloin and hind quarter of beef. Co-host, Certified Executive Chef Eric Yeager, will prepare a four course lunch, with delicious dishes such as Carpaccio of Beef and Fire Roasted Kabobs en Crepinette, for class participants. The cost of the event is $50 for non-students and $25 with student ID.
