Duff rocks Best of Baltimore party

duff at partyDuff Goldman hasn't forgotten his roots. The star baker, pictured, took to the main stage at last night's Best of Baltimore party, wearing a Ravens jersey and promising that his now-open shop on the West Coast is a Baltimore embassy.

To wild applause, he introduced a Best of Baltimore cake, pictured, made by his talented crew. (With Duff traipsing across the U.S., the Baltimore shop is now overseen by Geof Manthorne with Mary Alice Yeskey (see our April 2011 story) as marketing director.)

duff cake  Besides his new venture, Charm City Cakes West, Duff is also appearing in a new Food Network show, Sugar High, where he travels around the country sampling sweets at various bakeries and other venues.

Despite his hectic schedule, you can count on one thing: He'll be checking out the Ravens preseason game tonight, probably wearing his No. 92 Haloti Ngata shirt. Go Ravens!

Wearing Stretch Pants to Gino's

ginos openingWhen Gino's Burgers and Chicken opened this morning in Towson, diners started lining up at 9:30 a.m. in anticipation of their first Gino's meal in decades. The official opening was at 11 a.m.

Jennifer Grill of Baldwin arrived before 10 and had just one reason for being there, "I'm getting a Gino Giant," she said. "I don't care how many calories it is. I've got my stretch pants on."

Ragina Averella, who works at a nearby AAA office, said she did crunches the night before so she could get a Gino Giant for lunch.

Tim Mazz, who drove from Harford County, wasn't necessarily worried about his weight, though he admitted, "I'm here for the Gino Giant." The Edgewood resident is a collector of Gino's memorabilia. He's got coffee stirrers, a Gino's puzzle, and lots of tin ashtrays (those are vintage).

Other people showed up at the fast-food franchise on East Joppa Road with their own memories, one guy wearing a Colts T-shirt and another with an old menu.

Even several Baltimore County patrol cars showed up. I guess in case the middle-age Gino Giant lovers got out of hand.

There was a ribbon-cutting. Unfortunately, the restaurant's namesake, NFL Colts great Gino Marchetti, couldn't be there. He had been hospitalized recently for pneumonia. Up until two days ago, he was still hoping to attend, said Peg Varani, a Gino's corporate spokeswoman. "He'll be here" in the future, she promised.

I'm looking forward to going back soon for my own Gino Giant.

Annapolis cake stars in "The Help"

caroline's cakesA seven-layer caramel cake from Caroline's Cakes in Annapolis makes an appearance in "The Help" movie. The cake is a signature confection at the mail-order/retail business owned by Caroline Ragsdale Reutter.

The Post and Courier, a newspaper in Charleston, S.C., reported on the cake on Wednesday. The bakery's owner Caroline is a South Carolina native who moved to Annapolis in the mid-1970s, according to the story written by Teresa Taylor, a fellow Association of Food Journalists member. (A Smalltimore connection: The paper's publisher Bill Hawkins is a former Evening Sun reporter and editor.)

Now, Caroline's Cakes is asking Facebook fans to comment on "The Help's" Facebook wall. "Let them know what you thought of our silver-screen appearance," it asks.

Also, check out Max's movie review on our website. She gave it 3 ½ stars!

Food Truck Rally to Return Monthly

food rally The next food-truck rally is set for Sept. 2, location to be determined. Baltimore magazine intern Nicole Ogrysko, a student at Ithaca College, caught up with Damian Bohager, owner of The Silver Platter, to find out the latest on the gatherings. Here are her words:

Damian Bohager said he expects to hold the gathering on the first Friday of the month, with the possibility of adding more dates in the future. Unlike the first gathering—which started with rain and ended with long lines of people waiting for food—this month's event on Aug. 5 went much more smoothly.

The sky was clear, the lines moved quickly, and all 12 trucks were stocked with plenty of food ready to serve the rally's estimated 3,500 hungry visitors.

"The Silver Platter didn't run out until around 9:45 p.m., and Gypsy Queen, pictured, was going strong until the very end," Damian said.

Fojol Bros. and 2011 Best of Baltimore winner Haute Dog Carte joined regulars Iced Gems, Grr Che, and Miss Shirley's to dish out a variety of delectable gourmet cuisine.

The location at the Thames and Wolfe Street parking lot proved to be a suitable spot for the heavy stream of customers, but Damian said he's considering moving future gatherings to alternate areas of the city.

"We got a lot of compliments on that location," Damian said. "All the trucks were pretty spread out, and we had chairs and table set out."

Everybody goes to Gino's

gino'sUpdate: Gino's will open Aug. 17 with a grand opening ceremony and ribbon-cutting from 10-11 a.m.

I stopped by the Gino's Burgers and Chicken in Towson this morning, and a manager Patricia Rhine told me that Aug. 20 would be the opening date.

If the date changes, I'll let you know.

I wasn't allowed into the store, but I did get a peek at the big banner over the order counter using the nostalgic '60s advertising slogan, "Everybody goes to Gino's."

Gino's, named after NFL Colts great Gino Marchetti, was a popular Baltimore eatery for decades until it closed in the early '90s. This first franchise in the Baltimore area will feature burgers, chicken sandwiches, fries, onion rings, real ice-cream shakes, and salads.

I can't wait to have a Gino Giant. The new store is located near the corner of E. Joppa and La Salle roads, next to Applebee's. Gino's is currently hiring workers.

Old Stein Inn to reopen

old stein innThe Old Stein Inn in Edgewater is set to reopen on Sept. 14 in time to celebrate Oktoberfest. Wurst platters, sauerkraut, and beer will be flowing again at the German restaurant in Anne Arundel County that was heavily damaged by fire last December.

German-born chef Jason Howard will be offering his native cuisine with a modern influence in an updated kitchen. The entire restaurant, in a 100-year-old frame cottage, has been extensively renovated.

And attention, restaurant workers. Old Stein Inn is looking for employees, according to its Facebook page. Facebook fans will also be alerted to a sneak-preview pre-opening.

The restaurant's biergarten will feature entertainment by Sylvia and her accordion, Heidi and The Heimat Echo (who have been known to have yodeling contests), and other music.

Second-generation owners Mike Selinger and his wife Beth promise that the "Old Stein will be back better than ever."

The Other Side of Joe Squared

joe squaredJoe Squared owner Joe Edwardsen does more than bake great pizzas. He gives back to the community, too. Baltimore magazine intern Autumn Rose, a Towson University student, tells the story of Joe and one of his workers. Here are her words:

Joe Squared and Baltimore nonprofit Hand in Hand are teaming up on Monday to throw a 20th birthday party for Corey Terry—the first one he has celebrated as a free man in a while. For the past two years, Terry has been in jail on his birthday.

Terry was able to turn his life around with the help of Hand in Hand, founded by Jessica Turral after she graduated from Johns Hopkins with a goal to change the lives of incarcerated juveniles. "Our mission is to create self-awareness in young men, so they begin to see that jail is no longer an option, because they're better than that," she says.

Joe Edwardsen is proud to be a part of that community effort as a mentor to Corey Terry. When Hand in Hand came to Edwardsen asking if he had any jobs available at his pizzeria, he said yes and put Terry to work.

Terry has been at Joe Squared since June, doing just about everything. He cleans, he paints, he landscapes, whatever Edwardsen asks him to do.

"Corey is a hard worker and a good kid," Edwardsen says. "They keep thanking me for hiring Corey, but it has nothing to do with me. If Corey wasn't a solid worker, I would have fired him."

Terry has nothing but respect and admiration for Edwardsen, the man who looked past his record and gave him a chance. "He's the best boss I've ever had. He teaches me everything, and he picks my head up when I'm looking down," Terry said. "He knows I can do it, and he believes in me."

Edwardsen says Terry even comes in on his days off to take care of the tomato plants that Edwardsen gave him in the rooftop herb garden. "He checks his plants meticulously," Edwardsen said. "He's a good little farmer. I don't think we've had a single caterpillar eat a single tomato so far."

Terry is now enrolled in classes to get his GED. Turral hopes the birthday party for Terry at Joe Squared will be an inspiration to Terry's family and friends.

The next Hand in Hand event will be a fundraiser at Noodles & Company in Towson on Sept. 14 from 6-9 p.m.

So far, the nonprofit has helped over 50 young men in its program inside the Baltimore City Detention Center and in its community program.

Garden&Gun and Spike

garden and gun magazineSpike Gjerde makes an appearance in the award-winning Garden&Gun, one of my favorite magazines, with his crab-cake recipe.

In the magazine's August/September issue, Spike, chef/co-owner of Woodberry Kitchen, talks about using local crab and the importance of making sure all the shell is removed from the crabmeat before making the patties.

He shares that he "uses a black light to illuminate any remaining bits of shell." Wow, that's diligent!

If you haven't seen Garden&Gun, you can pick up a copy at Barnes & Noble. It's a wonderful Southern mix of stories from, yes, guns and music to food and travel.

In this issue, there's also a great story about Derek Trucks and Susan Tedeschi, the husband-wife team who are headlining Hot August Blues at Oregon Ridge on Aug. 20.

I just bought their Revelator CD. It's great music to cook by.

Drinks are important, too

Baltimore native Tim Riley is joining executive chefs Chris Becker and Mark Davis at the planned Bagby Restaurant Group restaurants TEN TEN and Fleet Street Kitchen in Harbor East. Riley, a Culinary Institute of America grad and certified sommelier, will be the beverage director.

TEN TEN, an American bistro located adjacent to Bagby Pizza Co. in the Bagby Building, is scheduled to open in September. An opening date for Fleet Street Kitchen, featuring farm-fresh artisanal food, hasn't been announced yet.

Joe Squared in Food Network Magazine

flag pizzaI have a confession to make about Joe Squared's Flag Pizza being selected as one of the nation's top pizzas by Food Network Magazine in its September issue. I suggested it along with two other local pizzeria's pies. (Any guesses on who they were?)

Here's what happened. Back in chilly January, a Food Network Magazine editor asked me to send her some recommendations for our best pizzas. If one of my suggestions was selected, I would write about it for the magazine.

In March, the editor contacted me again, saying the staff had picked the Flag Pizza for its "50 States, 50 Pizzas" story. I wrote up a blurb about the pizza, but there were conditions: "no blogging, tweeting, or posting about this at all."

I forgot all about it until the Food Network Magazine sent out a press release today. I'm just happy to have had a part in bringing national attention to Baltimore and Joe Squared.

But don't go rushing to Joe Squared for the pizza just yet. The restaurant is closed for renovations today through Thursday but will reopen on Friday.

The magazine issue will be on newsstands on Aug. 9. Or you can check out the winners at the magazine's website.

Goodbye, Rub. Hello, Hersh's Pizza

Brother-and-sister team Josh and Stephanie Hershkovitz are transforming Rub, the barbecue place, into Hersh's Pizza and Drinks. Or "de-Texasfying" it, as Stephanie says. They settled on the property, recently vacated by Rub, on Friday.

Chef Josh, who has cooked at Charleston and Petit Louis, will be preparing 12-inch Neopolitan-style pizzas in a wood-burning oven imported from Italy when the restaurant opens in October. Stephanie, a former New York attorney and lover of all things food, will handle the front of the house.

Their menu will also offer homemade pastas and rustic Italian food featuring cured pork products, other items, and lots of vegetables. "What's local, what's fresh," says Josh. "It's the way we like to cook with the best ingredients.

Josh and Stephanie, who grew up in Owings Mills, have wanted to open a restaurant together for a while. They focused on Neopolitan pizza because "we think this type of pizza is underrepresented in the city," Josh says.

They also were drawn to the location at 1843 Light St. since there aren't many restaurants nearby, Josh says. "People are already knocking on the door asking when we'll be open."

Adults-only ice-cream truck

dove ice creamFor real, an adults-only ice-cream truck is coming to Baltimore, offering free massages, manicures, and DOVE ice-cream bars. It may be a publicity stunt, but adults 18 and older are the beneficiaries.

The DOVE "Your Moment" truck started its tour yesterday in Chicago, drawing a big crowd with actor Ralph Macchio handing out free ice cream. (Macchio, recently of Dancing with the Stars, is now hawking ice cream! What's next?) The truck will make stops in Minneapolis and Baltimore, according to eater.com. No mention of whether the actor will be on board.

The Chicago tour schedule is listed on DOVE's Facebook page, but there's no date for the Baltimore visit. I'll keep checking.

Indigma to open next week

indigma logoChef/owner Tony Chemmanoor is planning for a midweek soft opening, but the exact date hasn't been set, he said on the phone yesterday. He sounded ecstatic that he is finally able to re-open his popular Indian restaurant that was gutted by a five-alarm fire last December.

"It's been a roller-coaster ride," he said of the efforts to deal with the damages.

The new Indigma will be located across the street from the old building in Mt. Vernon. Tony said that people have already been knocking on the door to see if he's open. "It's a good thing that I have a big door," he quipped.

Of course, Facebook has been abuzz about the anticipated opening. Updates are also available on the restaurant's website.

Tony said he'd be able to give me a firm opening date on Monday.

Welcome back, Indigma. We've missed your excellent modern Indian cuisine.
